WEDNESDAY, June 5, 2019 (HealthDay News) – Whether you grow it yourself or buy it at the farmers' market or in the supermarket, zucchini is a great way to add variation to traditional dishes and even increase the portion sizes of favorite recipes without adding extra calories.
Do you like cool cucumber salad? For a tasty variant, use thin strips of peeled zucchini, sliced on a mandolin. (Note: Mandolin blades are sharp. Always use the grab to hold the food you are preparing.) Pour with lemon juice, chopped dill, salt and olive oil and then cool an hour before serving.
Then try zucchini "noodles" instead of white pasta. Grater zucchini with the shredder attachment of the mandolin. Heat 1 tablespoon of olive oil in a large frying pan over medium heat and cook the zucchini for a minute until it starts to soften. Throw with your favorite marinara.

- 2 eggs lightly beaten
- 1/4 cup parsley, minced
- 1/2 cup grated Parmesan cheese
- White cup of 1/2 cup whole wheat flour
- 1/2 teaspoon baking powder
- 1/4 cup tarragon, minced meat (optional)
- 1/8 to 1/4 teaspoon of nutmeg, as desired
- 1/4 teaspoon of salt
- 1/4 teaspoon freshly ground pepper or to taste
- 1 pound of zucchini (about 2 medium), stems removed and grated
- Olive or rapeseed oil
Combine all ingredients except the zucchini and oil in a large bowl. Beat for one to two minutes to remove large lumps. Add the zucchini to the bowl. The moisture will produce a thick batter while you stir (use it immediately).
Heat 1 tablespoon of the oil in a large frying pan over medium-high heat. Make three or four beignets at once with a size of 1/4-cup. Cook for two to three minutes on each side until light brown. Drain on paper towels. Repeat this until you have used up all your batter. Serve immediately.
